Photos show a C5 knob; the process is the same for your knob.
Step 1. Remove the factory leather by cutting the old seams. It's only lightly glued and comes off easily.

Step 2. You'll have two leather pieces, plus a needle and thread for lacing.

Step 3. Apply adhesive to the rear and top of the knob, where the larger piece goes. Don't glue the whole knob yet.

Step 4. Lay the larger piece on, using the old seam marks as a guide. Press the edges firmly, taking extra care at the curved top rear to avoid wrinkles.

Step 5. Glue the front of the knob and fit the smaller piece so its edges meet the first piece. This takes some pressure.

Step 6. If the edges won't meet, carefully peel back and reposition the first piece. The leather won't tear. Re-glue and press, using your fingers to line the edges up.

Step 7. Lace the seam: knot the thread, start at the first hole, join the first stitch on each side, then lace every stitch, pulling firm as you go. Finish with a loop joining the last stitches and tie it off.

Step 8. Carefully extend the pre-cut opening at the top toward the corners of the knob's hole, a little at a time, until the leather folds in without strain. Glue it to the hole walls and hold until it bonds.
Step 9. Reinstall the knob.
Leather care: apply a leather conditioner with UV protection every 4-6 weeks to keep it from drying out and cracking.
